Sweet Potato Pancake
Ingredients:
1 cup all purpose flour or wheat flour
pinch of salt
3 tbsp of sugar (I used organic sugar)
1/2 tsp baking powder
1/2 tsp baking soda
2 cups butter milk
1 Egg
2 tbsp butter
1 sweet potato
2 tbsp honey
1/2 tsp cinnamon powder
1/2 tsp minced ginger or ginger juice
additional butter for pan
Method:
- Boil sweet potato for 2 whistles and put them in cold water which will ease you to peel the skin.
- Whisk flour, salt, sugar, baking soda, and baking powder together and set aside.
- In a separate bowl, whisk buttermilk, eggs (you can omit egg if you are vegetarian) and melted butter. Stir mashed sweet potato, honey, cinnamon, ginger and mix well.
- Combine both the mixture. Allow batter to sit for about 30 mins.
- Heat Tawa / Skillet and apply enough butter. Ladle the batter. Cook pancakes until done and slightly browned/golden brown on each side. Repeat, cooking pancakes in batches adding butter to pan as required.
- Relish your pancake with almond butter / chocolate syrup / nutella / maple syrup.
