Broccoli, Babycorn and Pasta Salad

 This is a colourful salad. 


Ingredients:

1 yellow bell pepper, diced

5-6 cherry tomatoes

7-8 mushrooms

6-7 baby corns, diced into big chunks

1 cup broccoli, cut into small pieces

2 cups penne pasta

celery

salt

3 tsp of black pepper powder

1tsp of minced garlic


Method:


  • Blanch the broccoli in a pan of hot water for 6-7 minutes and drain out the water well
  • Boil penne pasta with 1tsp of oil until al dante. Run under cold water and drain well.
  • Heat olive oil in a pan, add garlic and saute for 1 minute. Add the babycorn and saute until slightly brown and add bell pepper and saute. 
  • Add other vegetables including mushrooms and toss well for another 1-2 minutes. I prefer adding tomatoes at last for keeping it raw. 
  • Toss in the pasta and finish with adding salt and pepper. 
  • Garnish the salad with celery leaves and serve hot or cold.

Notes: Tip in some fresh herbs like parsley and basil for some added flavour if celery in unavailable.
