Chia Seed Pudding
This breakfast thingy is one of my favourites. Wanna know what this is? Here you go
Serves 2
Ingredients:
Pre made mixture to be soaked overnight
3 tbsp of chia seeds
1 cup of coconut milk
3-4 tsp of honey
1/4 tsp of cinnamon powder
Chop Chop Chop fresh fruits next morning
1 whole kiwi
1 whole ripe banana (yellakki)
1 whole apple
5-6 wet dates
3-4 dry figs
Nut brittle for toppings
8-9 almonds
6-7 plain pistacios
3 tbsp of jaggery sugar
water
Method:
- Take a non stick pan, add sugar and a little bit of water to caramelise. Now add chopped almonds, pistacios and mix. Turn off the flame and spread the caramelised dry fruits on the silicon mat or in a plate.
- Take a pudding jar, layer it with fruits and chia seed milk alternatively. First layer of kiwi then the layer of chia seed mixture, next layer of banana another layer of chia seed mixture, add dates, apple and dry figs. Top another layer of chia seed mixture.
- Last but not the least top with nut brittle.
Notes: You can use seasonal fruits of your choice. I topped the last layer with pomegranate to look colourful. You can do too :)
