Plum Cake in Pressure Cooker
It would not be Christmas without Plum Cake. Wishing all my readers a very merry Christmas 🎄🎅
Ingredients:
For soaking dry fruits
- 1/4 cup raisins
- 1/4 cup tutti frutti
- 1/4 cup cranberries
- 1/4 cup blueberries
- 1/4 cup blackberries
- 6-7 teaspoon of rum
For Cake Batter
- 1 cup of warm water
- 1 cup brown sugar
- 2/3 cup of oil / butter
- 2 cups maida / all purpose flour / plain flour
- 1/2 teaspoon of cinnamon powder
- 1/4 teaspoon of nutmeg powder
- pinch of salt
- 1/4 teaspoon of cardamom powder
- 1/2 teaspoon of baking soda
- 1 teaspoon of baking powder
Method:
- In a bowl, take all the dry fruits, add 6-7 tsp of rum and mix well. Soak it overnight for more flavours. However, you can vary the quantity of dry fruits and nuts according to your preference (figs, apricots, dry dates).
- For cake batter: In a bowl, take 1 cup of warm water to that add 1 cup of powdered brown sugar, 2/3 cup of oil and whisk till the sugar melts completely.
- Further take a sieve add 2 cups of plain flour, 1/2 tsp of baking soda, 1 tsp of baking powder, 1/2 tsp of cinnamon powder, 1/4 tsp of nutmeg powder and salt. Sieve well and make sure all spices are mixed well with the flour.
- Blend till the batter is combined and of smooth consistency. Do not over mix.
- Now squeeze off the soaked dry fruits completely and add to cake batter, give a gentle mix making sure the dry fruits are uniformly mixed.
- Take the cake mould grease it with butter. Transfer the cake batter into the cake mould, pat the tray to remove the air.
- Place the mould in a pre-heated cooker (heat it for about 5-10 mins), close the lid of the cooker without gasket and whistle. Simmer for 40 minutes.
- Serve the cake and enjoy.
PS: You can use grape juice / apple juice / red wine / brandy or any alcohol for soaking dry fruits.
You can also use powdered white sugar instead of brown sugar.
