Roasted Sweet Potato Salad

Ingredients

  • 1 medium sweet potatoes, peeled and chopped 
  • 1/2 tsp salt
  • 1 tsp pepper powder
  • 2 tbsp olive oil
  • 2 tsp minced garlic
  • 1 1/2 tbsp lime juice
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 1/2 cups cooked, black beans (rajma)
  • 1 cup sweet corn cooked
  • 3/4 cup fresh coriander, chopped
  • 2 sticks of spring onions
Method


Toss sweet potatoes with 1 1/2 tbsp oil, sprinkle some salt and pepper powder and place it on a large parchment baking sheet. Position it in a non-preheated oven then turn the oven to 350-F. Bake for about 25 minutes, or until potatoes are soft. Take a large bowl, add all remaining ingredients then toss with the sweet potatoes.




PS: If oven is not an option, you can chop the sweet potato and roast it on tawa.
